Raw Chocolate Mousse

chocolate mousseI’ve made many versions of raw chocolate mousse, and by far, this recipe is my favorite. Why? The zucchini lightens up the heaviness found in some other recipes I’ve made, so it is both rich and lusciously light.

Raw Chocolate Mousse

2-4 Servings

Ingredients

  • 1 avocado
  • 1 cup almond milk, hemp milk or coconut water
  • 1 zucchini, chopped
  • 1 tablespoon raw cacao powder (or more to taste)
  • Stevia to taste (chocolate or vanilla if you have it)
  • 1 teaspoon vanilla powder (to taste) I LOVE the way the vanilla rounds out the cacao!

In a high-speed blender or food processor, blend ingredients until you achieve a smooth, velvety texture.

Put in refrigerator to chill and set… and then enjoy!

Optional Serving Suggestions:

  • Fresh Berries
  • Peppermint extract or food-grade peppermint essential oil, raw cacao nibs and fresh mint leaves

Do keep in mind, you may very well want to double up this recipe, even if it is just for you! It is that good!

    Thanks for sharing, this looks good, will look for vanilla powder at health food store. What is raw cacao powder? Does hershey European Dutch cocoa powder work? ….also question about raw greens for digestion issues, my challenge is that raw foods trigger gastritis.

    HI MaryEllen! I like to use the vanilla powder to round out the chocolate. I think you’ll like it too. Regarding the chocolate, I recommend looking for raw cacao at a local Whole Foods or natural health food store, it’s a much healthier choice.

    Regarding gastritis. This is an inflammatory problem. Are you open to drinking fresh green vegetable juice? The reason I recommend this is, when we have digestive problems, our ability to absorb, assimilate and eliminate gets impaired. Green juice requires no digestive fire, it’s like a straight IV of nutrition into your body and will quell inflammation too! You want to start thinking anti-inflammatory everything. If you search through my blog, I write about inflammation and the problems it causes. Of course, please post any questions you have here. I’m happy to help!
