Crispy Gluten-Free Buffalo Tofu (Freezer Method)

If you are looking for a buffalo “wing” that has a ridiculously crispy bite and an awesome, veg-centric, pub-style texture, this recipe is a full-on game-changer! The secret lies in a brilliant two-step trick that I loved learning about: freezing the tofu ahead of time to create a porous, sponge-like interior, and coating it in potato starch for an ultra-light, crispy-edged crust that stands up perfectly to the classic hot sauce recipe. It is naturally gluten-free, dairy-free, veg-centric, and incredibly easy to make in an air fryer or oven. 

Prefer another option? You can swap the tofu out for fresh cauliflower florets. This crispy potato starch coating works beautifully for both! 
  • Prep Time: 15 minutes (plus tofu thawing time)
  • Cook Time: 15 minutes
  • Total Time: 30 minutes
  • Servings: 2-3 

Primary Equipment

  • Air Fryer or Oven
  • Large mixing bowl or zip-top bag
  • Clean kitchen towels or paper towels
  • Heavy skillet or book (for pressing) 

Ingredients

The Crispy Base

  • 1 block extra-firm tofu (frozen in its original packaging, then fully thawed)*
  • ¼ cup potato starch (the secret ingredient for the ultimate crunch)
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • Cooking oil spray (avocado or Extra Virgin Olive Oil) 

The 3-Step Buffalo Sauce

  • ½ cup water
  • ¼ cup white vinegar
  • 3 tbsp tomato paste
  • 2 tbsp extra virgin olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ¼ tsp cayenne pepper
  • ½ tsp sea salt
  • ¼ tsp tapioca starch (see notes for easy pantry alternatives)

For an easier sauce option try Lillie’s Wing Sauce (my favorite!) or Primal Kitchen’s Buffalo Sauce

Instructions

Prep Your Base

  1. Take your fully thawed tofu block and gently press it between clean kitchen towels under a heavy object (like a cast-iron skillet) for 15 minutes to drain the water released during freezing.
  2. Use your hands to tear the tofu block into bite-sized, uneven chunks. Pro-Tip: Avoid using a knife! Tearing creates jagged edges and deep crevices that catch the coating and sauce far better than clean cuts. 

Coat for Maximum Crunch

  1. Preheat your air fryer to 400°F (200°C) or your oven to 425°F (220°C). 
  2. In a large zip-top bag or a large lidded bowl, combine the potato starch, nutritional yeast, garlic powder, onion powder, and salt. 
  3. Add your prepared base pieces to the container, close it tightly, and shake vigorously until every single piece is uniformly coated in the seasoned starch. 

Cook Until Golden

  • Air Fryer Method: Arrange the pieces in a single layer in your air fryer basket, leaving space between them. Spray generously with cooking oil. Air fry at 400°F for 12–15 minutes (adjust time based on your chosen base), shaking the basket halfway through, until a bubbly, golden crust forms. 
  • Oven Method: Spread the pieces evenly across a baking sheet lined with parchment paper. Spray thoroughly with EVOO oil. Bake at 425°F for 25–30 minutes, flipping halfway through, until exceptionally crisp. 

4. Simmer Sauce and Toss

  • While your base cooks, whisk all of the Buffalo Sauce ingredients together in a small saucepan over medium heat until completely smooth.
  • Bring the sauce to a gentle boil, then immediately turn the heat to low and simmer for 3 minutes, whisking constantly, until it turns thick and velvety.
  • Remove the sauce from the heat, let it cool for 2 minutes, and then toss your piping hot, crispy bites directly into the sauce bowl. Stir quickly to coat and serve immediately.

Recipe Notes & Variations

  • Tapioca Starch Alternatives for the Sauce: Because such a small amount is used to thicken the glaze, you can easily use pantry swaps at a direct 1:1 ratio. Arrowroot powder or organic cornstarch work perfectly. Alternatively, just use ¼ teaspoon of the potato starch you already have out for the tofu coating to keep it simple!
  • The Cauliflower Option: Swap the tofu block for 1 medium head of cauliflower cut into bite-sized florets. Wash and dry them thoroughly before tossing them in the dry dredge. Air fry or bake at 400°F for 15–18 minutes until tender-crisp and golden.
  • Why Potato Starch? Unlike regular gluten-free flour blends, potato starch is a pure starch that expands when heated. It reacts with surface moisture to create a microscopic, crispy shell that resists getting soggy when drenched in sauce — A super exciting discovery in my culinary adventures!
  • The Freezer Trick I love: Freezing tofu turns the water inside into ice crystals. When thawed, these crystals melt and leave behind a network of empty air pockets. This gives the tofu a chewy, chicken-wing texture that absorbs sauces like a sponge.
